This recipe was inspired by c. A Caucasian woman from Hungary who cooks the baddest jollof rice I have tasted, better than a lot of jollof rice I had eaten in Nigerian homes. She offered me some of her amazing jollof rice with stir-fried beef with vegetables and I wanted mooooore. Aunty Georgie! Much respect!!!

If you want to enjoy beef in a whole different way, then try this recipe. Stir fried beef with vegetables is Asian in origin but the selected vegetables I used can be found at your local grocery shop.

The Asians are known to rustle up fantastic dishes in minutes. Why don’t you indulge yourself by trying out this recipe.

2 tbsp. Sunflower or vegetable oil
350g beef fillet, sliced thin
1/2 red onion, sliced
2 carrots, sliced thinly
1 green pepper, seeded and sliced
1 red bell pepper, seeded and sliced
1 handful of shredded cabbage

To make Sauce:
3 tbsp. sherry/brandy
3 tbsp. light soy sauce
1 tsp freshly ground ginger
2 garlic cloves, crushed
1 tsp. cornstarch
1 tsp. tomato paste




Stage 1: Cut the beef fillet into thin stripes. Slice the onion, carrots, red and green bell peppers. In a bowl, mix all the ingredients for the sauceand set aside.



Step 2: Pour the sunflower/vegetable oil into a pre-heated wok or non-stick frying pan. Add the beef, onion, a bit of crushed garlic and a wee bit of salt. Fry for 5 minutes or until the onion has soften and the meat is turning brown. Follow with the carrots, green and red bell pepper and fry for 5 minutes.


Step 3: Pour in the cabbage, stir fry for 2 minutes. Add the sauce and allow to bubble for 3 minutes or until the juices thicken.


Serve with steamed rice or jollof rice. Yaaay!
